Following on from their successful ventures in Lisbon and major cities in the USA, Timeout Markets plan to roll out the Market Hall concept in London.
The first Market Hall will be located in Waterloo Train Station and will be the anchor unit in a new shopping area which forms part of the larger regeneration of Waterloo Station.
The facility comprises 3 storeys, 2 storeys of public space and a basement back of house area, which includes cold stores, general storage, keg rooms, central wash up, offices, lockers and showers.
The space is constrained as it is located beneath the railway tracks and directly above underground tracks which created space planning and engineering services challenges.
The Market Hall includes 18 kitchens which include 4 ‘Signature’ chef kitchens, enabling Michelin star chefs the opportunity to showcase their signature dishes. This will be complemented by the ‘best of the rest’ of great restaurants across London, set around a communal dining area with space for up to 650 covers. The unit also incorporates bars, coffee outlets and a performance space. Timeout manage the facility and provide the kitchens fully fitted out with all cooking equipment. The facility includes a central wash up of all cutlery and crockery.
The kitchen extract from all units had to be filtered and integrated into the station design. Heating, cooling and electrical supply is connected to the station energy and power network.
KJ Tait Engineers’ role included the interface with the station fire alarm and PA & VA systems.
All systems were designed in accordance with requirements and standards of the Landlord.
